Cocktail recipe: Pink Castle Gin gimlet

Written by Lucy Paul
A large bottle of Pink Castle gin sits on a log next to a miniature bottle of the same gin. The background is of Craievar Castle, but it is blurred.

Inspired by Craigievar Castle, the Pink Castle Gin gimlet is a ’pretty in pink’ twist on the classic cocktail. Blending Pink Castle Gin, raspberries, lime and syrup for a refreshing tipple!

A take on the classic gimlet inspired by the Trust’s pink castle – Craigievar Castle in Aberdeenshire. Our award-winning Pink Castle Gin, distilled by Lost Loch Distillery just seven miles away from Craigievar Castle, is berry-led, with juniper, strawberries and raspberries forming the perfect flavour profile for a simple yet delicious ‘pinklet’.

Ingredients

  • 50ml Pink Castle Gin
  • 4 raspberries (extra for garnish)
  • 15ml simple syrup
  • 20ml freshly squeezed lime juice

Instructions

  1. Muddle the raspberries and simple syrup in the bottom of a shaker.
  2. Pour the gin and lime juice, then fill the shaker with ice.
  3. Shake well, then strain into a chilled glass (a coupe works well).
  4. Garnish with extra raspberries.

Cheers!
