Recipe: Irene’s clootie dumpling from Castle Fraser

Irene’s tasty clootie dumpling
Step back in time with Castle Fraser’s clootie dumpling! This traditional steamed dessert is a spiced, fruity treat — perfect for sharing this season.

Ingredients

  • 170g plain flour
  • 170g breadcrumbs
  • 170g suet
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp nutmeg
  • 170g sultanas
  • 170g raisins
  • 1 tsp baking soda
  • 170g soft brown sugar
  • 2 tbsp golden syrup
  • Dash of milk

Instructions

1. Mix all the dry ingredients in a large bowl. Add in the syrup and enough milk to create a consistency that drops from the end of your wooden spoon.

2. Pour the mix into a greased and lined oven-safe glass bowl. Cover with foil.

3. Place the bowl in a large pan of water and bring to a boil. Steam for at least 150 minutes, topping up the water as needed.

4. Cool slightly, then turn out onto a warm plate. Serve warm with custard, or keep refrigerated and serve cold.
