Recipe: Joyce’s apple muffins from Haddo House

Joyce’s apple muffins at Haddo House
Joyce from Haddo House in Aberdeenshire shares one of her favourite bakes: apple muffins. This is a perfect autumnal recipe to try yourself at home this year.

Ingredients

  • 150g butter
  • 150g light brown sugar
  • 2 eggs, beaten
  • 150ml milk
  • 250g self-raising flour
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • 2 apples, chopped into small cubes (250g in weight when peeled and cored)

Before you begin, leave the eggs, milk and butter out to reach room temperature – about 30 minutes should be enough.

Preheat the oven to 170C/Gas Mark 6.

Instructions

1. Cream together the butter and sugar in a bowl until light and fluffy.

2. Stir in the milk and beaten eggs.

3. In a separate bowl, mix together the flour, baking powder, cinnamon and salt.

4. Add the wet ingredients and gently mix until combined.

5. Gently stir the apple into the batter mix.

6. Transfer the batter mixture into the muffin cases, filling each one almost to the top. There should be enough for 12 muffins.

7. Sprinkle the top with a little brown sugar before placing in the oven for 20 minutes.

8. Leave to stand for 5–10 minutes before serving, and then enjoy!
